This qualification provides students with the skills and knowledge required to be a meat inspector. Content areas covered include: detect diseased and defective animals, both ante-mortem and post-mortem; inspect transportation container/vehicle; calibration and data handling; laboratory tests and procedures; maintain personal equipment; apply basic hygiene and sanitation practices; apply quality assurance practices. The course covers all aspects of meat inspection at a domestic meat procesing plant.

Content areas covered include: participate in OH&S risk control processes, oversee hygiene and sanitation, conduct an internal audit, facilitate quality assurance process, manage/oversee external audits and conduct statistical analysis of process.
